  • 50ml pickled onion juice
  • 50g caster sugar
  • 800g seedless watermelon, peeled
  • 200g Redondo Sliced Serrano jamón (173424)
  • 100g Dansk Valg Danish Fetta Cheese (160650)
  • 50g cream cheese
  • 30g chives, finely chopped

METHOD

1.

Mix pickled onion juice and sugar together in until sugar is dissolved

Cut the watermelon rectangles and place into a vacuum bag, then add the pickled juice mix. Vacuum seal the melon on a medium setting if available, then remove the melon from the bag. Dry with a food safe cloth and wrap with Redondo Sliced Serrano Jamón

Place the jamón wrapped watermelon into a vacuum bag, then vacuum again. Remove from the bag then cut the melon and jamón into cubes

Meanwhile blend the Dansk Valg Danish Fetta Cheese and cream cheese in a food processer

To serve, turn the melon cubes so the exposed melon side is facing up and pat the surface dry. Pipe the creamed fetta onto the melon cube and garnish with chives
